The recipe for these cashew butter cookies is loosely based off of a Peanut Butter cookie recipe. These aren’t just good for gluten-free, they are just plain great. ![]() So this cookie recipe is full of all the good stuff that makes cookies gooey and buttery. I create us a combination of healthy foods and comfort foods. We are gluten and dairy free due to my sister’s autoimmune disorders, and my dad and I’s intolerance to dairy. This didn’t make them bad though – I ended up creating our new favourite cookies!Īgain, like all of my cookie recipes, these are not a “healthier” cookie. However, it was not as nutty as a peanut butter cookie (so I am told). I figured that cashew butter has a similar consistency, so it should be pretty comparable. Since I am have a peanut allergy, but two parents who love peanuts. My mom had asked me to try creating a “Peanut Butter Cookie” without the peanut butter. And while you can buy oat flour, it also can easily be made in your own kitchen by pulsing oats in a food processor or blender.
